Chipotle inspired Chicken Burrito Bowl

Ingredients

1 lb Boneless Skinless Chicken Breast

3 Tablespoons Olive Oil

1/2 Diced Yellow or Red Onion

1 Jalapeno

2 Cloves Garlic

1 Cup Uncooked Long Grain or Brown Rice

14.5 oz Can Diced Mexican Style Tomatoes

1 15 oz Can Black Beans -Drained-

1/2 teaspoon Garlic Salt

1/2 teaspoon Chili Powder

1 teaspoon Cumin

2.5 Cups Low Sodium Chicken Broth

Kosher Salt and Black Pepper

2 Cups Your Choice Cheese (Colby, Chedder Pepper Jack)

Freshly Diced Tomatoes

Green Onion

Other toppings of your choice: Cilantro, Guacamole, Sour cream etc..

PREP

1)Remove Seeds from Jalapeño and Dice

2) Dice Garlic

3) Dice Onion

4) Dice Chicken

5) Dice Tomato and Green Onion

5) Grate Cheese

Instructions

1) Saute onion, Jalapeno and Garlic in 2T Olive Oil with a pinch of Salt on Med-High heat until they begin to soften.

2) Add diced Chicken to Pan. Season with Salt, Garlic Salt and Black Pepper. Cook until Chicken begins to brown. It does not need to be cooked all the way through at this point as it will continue to cook with the rice.

3) Move Chicken to one side of the pan. Add 1T olive oil to empty side. Add Rice and cook for about 2 minutes. Rice will begin to toast. Stir altogether with Chicken.

4) Add Chicken Broth

5) Add Canned Tomatoes, Black Beans, Cumin and Chili Pepper. Stir together

6) Reduce to Med-Low heat and let simmer for about 20 minutes or until Rice is tender.

7) Season to your liking with additional Salt and Pepper. Pour into serving dish and sprinkle Cheese. Let melt.

8) Add Diced Tomato and Green Onion. (And any additional toppings you like)
