Sunday lunch chicken soup

This is the easiest, healthiest, most delicious family meal you’ll ever make!


1 large whole chicken

1 large onion

4 large carrots

4 parsnips

4 sticks celery

4 leeks (white part only)

1 bunch Italian parsley

3 tablespoons garlic oil

3 tablespoons Noilly Prat (or other white vermouth)

3 tablespoons salt

3 tablespoons peppercorns

1 bouquet garni



Turn on the oven: 400F

Peel and roughly chop vegetables into chunks

Press down on chicken firmly to crack breastbone and make it a bit flatter

Put a large Dutch oven (oval shape is best) on the stove-top: low/moderate heat

Add the garlic oil and heat without burning for a couple of mins

Add chicken and brown gently on both sides for a couple of mins

Pour the Noilly Prat over the chicken and let it steam/bubble/evaporate for a minute

Add a bit of water to stop things burning

Shove in as many of the vegetables as you can around and on top of the chicken

Add the salt, peppercorns, bouquet garni

Top the whole thing with water, right to the brim. You’ll need 2 or 3 jugs

Shove in the bunch of parsley intact, using a wooden spoon

Put the lid on the Dutch oven and put it in the pre-heated oven

Leave for at least 1 hour 45 minutes — but anything over that to 2 and a half is fine


This is the most fiddly part of the whole process — takes around 10 mins

Put some rice on to cook — however much you need per person

Set up a couple of bowls and large dishes on the counter

Take the Dutch oven out of the oven — careful, it will be really heavy!

Start fishing out the vegetables, put them in a dish

Fish out the chicken — it should have started to fall apart a bit — and pick off the meat, putting it in small chunks alongside the vegetables

Put the bones, skin, carcass etc (along with bits of vegetables you don’t want to eat — like the parsley, or in our house the onion, celery and leeks) in another bowl for tossing

When you’ve done all that, you’ll be left with delicious broth in the Dutch oven — but you need to strain it. Put a fine sieve over a bowl in the sink and strain the soup

Then put it all together!

Rice + chicken + vegetables + a few ladles of broth. Perfect family Sunday lunch!
