Recipe: Syrian Oregano Bread

There’s more to bread in the Middle East than just pita!

When it comes to Middle Eastern bread, pita bread is the most recognizable in the United States. There are plenty of other delicious breads, however, and today we’re introducing you to a recipe for Syrian oregano bread from Syrian-American baker Bushra Hawat! It’s simple, easy, and delicious, especially with some olive oil and za’atar.

Ingredients :

Three cups all-purpose flour, sifted

One teaspoon salt (can use more or less according to taste)

One and a half teaspoon of yeast

A half teaspoon of baking powder

A half teaspoon of paprika

A half teaspoon of black pepper

A half teaspoon of ground fennel seeds

A half teaspoon of ground anise seeds

A half teaspoon of cumin

A half teaspoon of onion powder

A half teaspoon of garlic powder

One and a half tablespoon of sesame seeds

A third cup of oregano (can be either crushed dried of fresh finely chopped)

A half cup extra virgin olive oil (if the taste of olive oil is too sharp for you, you can use a mixture of two parts olive oil one part corn oil )

About three quarters of warm water

Instructions:

Mixing the ingredients together

Preheat the oven to 410° F

Mix well all the dry ingredients

Slowly add in the olive oil and work it into the mixture

Slowly add the warm water and kneed the mixture well until you have a set dough

Cover the dough with a plastic wrap and then cover the mixing bowl again with thick cloth or towel

Allow the dough rise and double in size for an hour and a half to two hours

Out of the dough, make small dough balls and place on a clean surface, letting them rest for five minutes

Roll the dough balls into disk that’s about a half inch thick

Let the disks rest for five minutes then poke holes in the top of the disk using a toothpick or fork

Put the disks in a baking tray and bake on the middle shelf in the preheated oven for 10 minutes, or until the disks are golden brown

Take out of the oven and let cool on a wire rack or a piece of clean cloth

Once cool, keep the bread in an airtight container to maintain freshness!
