Jason — The Kingkiller Chronicles by Patrick Rothfuss is (IMO) in a league of its own in terms of epic fantasies not named A Song of Ice and Fire. I personally enjoy it more. The writing is off the charts. It reads like a song or poetry.

Only the first two books of the trilogy are out — with the final book being in a Game of Thrones Book 6 scenario where it’s seemingly due but no release date is in sight. The first book, The Name of the Wind, starts out a tad bit slow, but once it picks up it’s the best of anything I’ve read.

Another series I’m reading that you may enjoy if you dig Thrones is the Stormlight Archive by Brandon Sanderson. Really really great. Awesome characters and incredibly written action scenes.

Hope this helps!
Cheers.
