What is Second Flush Tea?

Second flush tea is as distinct as the first flush tea. It is harvested and manufactured in the months of April end to June. The cup appears to be bright and the taste is well rounded and bold.

The leaves plucked are more mature and the flavors are more pronounced compared to a cup of first flush tea. This indeed is perfect as an afternoon tea with sandwiches and scones smothered with homemade jam.

Please note, all regions growing tea manufacture second flush tea. It does not pertain to only tea manufactured in Darjeeling, India.

What is First Flush Tea.

Two Leaf and a Bud

The first pluck of the harvest is called the first flush. The tea harvest in India is from the month of February to the month of December depending on the geographical region and the weather. The tender two leaf and a bud which blooms after the dormant period of winters is plucked to taste like sunshine in a cup. It looks bright and tastes fresh and floral.

How to brew Ice/ Cold Tea?

Remember to make the perfect chilled glass of Ice Tea, it is of utmost importance that the tea leaf used is of good quality. No amount of addition of flowers, fruits, flavors can rectify that which has gone wrong at the source. Hence opt wisely and get ready to buy loose leaf tea.

Once you have the tea, measure 1 litre of water. Heat it until the bubbles come to the side of the pan or its 95-degree Centigrade. Add 9 grams of the Tealeaf/infusion to the water and allow it to steep for 10 minutes. Strain. Let it cool. After the infusion has cooled, add sugar or honey as per taste. Cut in fruits and keep it overnight in the refrigerator or few couple of hours before serving chilled.
