You can eat eggs…

The Paleo diet. While it’s not the most restrictive diet, I’ve stumbled a little out of the gate trying to grasp the diet. I’ve had a difficult time staying optimistic about switching full time to the paleo diet, and I think it comes from what I know and what I don’t know about he paleo diet.

If there’s one thing I know, it’s that you can eat eggs. I love eggs! So this works perfectly for me. But what else is there besides eggs! You can also eat meat! But one of the biggest things I don’t know are what you can’t eat. In the past I’ve spent so much time around trying to eat whole grain, and including more fiber in my diet. So shutting off that side of my brain has been really difficult.

That’s my challenge for the week ahead though. I need to find different ways to enjoy paleo throughout the day. And really push what’s possible for this last stretch of about 40 days.
