Arroz Caldo
When I stumbled upon the Chicken and Rice Soup With Celery, Parsley and Lemon recipe from @ALISLAGLE on @nytcooking, I was instantly reminded of the #ArrozCaldo my mom would whip up for me as a young child when I would get sick.
After one spoonful of Arroz Caldo, flavors of lemon and ginger, mixed with chicken and rice would send shock waves from my taste buds to every cell in my body instantly leaving me feeling soothed, and wanting more than just a second bite. In that moment, the waves of chill and fever that had taken over my body were no longer. The food gods heard my prayers and defeated all things miserable, and in the midst of sickness I became lost in pure happiness covered in comfort and warmth!

Ingredients
2 tbsp oil
3–4 lbs chicken, diced
1 onion, chopped
3 cloves garlic, chopped
4 stalks celery, chopped
1/2 cup parsley, chopped
3 tbsp ginger, grated
3 lemons for juice (use lemons for zest)
1.5 cups of rice
3 cups of water
5 cups of chicken broth
1 chicken bouillon
salt, pepper, patis to taste
