Step 1

  • Prep the Vegetables: Start by chopping your broccoli into small florets and finely dicing the onion and garlic.

Step 2

  • Sauté the Onion and Garlic: In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, cooking until the onion becomes translucent and the garlic is fragrant (about 3–4 minutes).

Step 3

  • Cook the Broccoli: Add the broccoli florets to the pot and pour in the chicken or vegetable broth. Bring to a boil, then reduce the heat and let it simmer for about 10–15 minutes, or until the broccoli is tender.

Step 4

  • Blend the Soup: Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, you can transfer the soup to a regular blender in batches. Be careful with the hot liquid!

Step 5

  • Add Cream and Cheese: Once blended, return the soup to the pot if you used a regular blender. Stir in the heavy cream and shredded cheddar cheese until the cheese is completely melted and the soup is creamy.

Step 6
