Rice sevai or shyavige or santhakai is a traditional Quick to make breakfast recipe from South India. Rice Sevai is a Savory spice flavored thin rice noodles or Rice vermicelli. This is a kind of traditional breakfast in many south indian household and people love to have this dish instead of the regular idli and dosa.

Iam more of a breakfast person than any other meal and very particular that i get a solid perfect breakfast on time. Iam a fussy eater and need variety of dishes every time. I get irritated when same dish is repeated. That is why i prefer making sevai for breakfast and try all cuisines and that is how i landed in food blogging to document my taste of recipes.

Rice Sevai — south indian breakfast prepared with rice noodles and given a savory flavor


  • To Cook Rice Vermicelli:
  • 4–5 Cups Water
  • 1 teaspoon Oil / Ghee / Extra virgin Olive oil
  • 2 cups Rice Sevai / Rice vermicelli
  • Salt as needed
  • Temper:
  • 1 tablespoon Oil / Ghee / Olive oil
  • 1 tablespoon Chana Dal / Bengal Gram
  • 1 teaspoon Urad dal
  • 1 teaspoon Mustard seeds
  • 10 Cashewnuts , halved or full (Optional)
  • 1/4 Cup Peanuts (Optional)
  • 2 Green Chillies , Chopped
  • 1/2 inch Ginger , Fine Chopped
  • 1 Onion , Fine chopped
  • 5–6 Curry leaves
  • Salt as needed
  • 1 teaspoon Lemon Juice
  • 1/4 cup Grated coconut
  • Garnish:
  • 1/4 Cup Grated Coconut
  • 1/4 Cup Fresh Coriander leaves / Cilantro


  1. [u][b]How to cook Rice vermicelli:[/b][/u]
  2. On High heat, boil water in a deep pan. When water starts to boil, add ghee, rice vermicelli, salt. Give it a stir. Close the pan with a lid. Switch off the Stove after a minute
  3. [u][b]To temper:[/b][/u]
  4. After 8 to 10 minutes, drain Parboiled Rice vermicelli in a colander and keep aside
  5. Turn the stove to low heat. Heat oil in a pan. Add chana dal, urad dal and let it fry till golden brown
  6. Add mustard and let it splutter.
  7. Add Cashews, Peanuts and saute till it starts turning golden color
  8. Add green chillies, Ginger, Onion, curry leaves and saute till onions turn translucent
  9. Add the cooked Rice vermicelli, salt and mix well till vermicelli gets coated in the spices and salt is evenly spread
  10. Add the grated coconut and mix well. Close with a lid and let it cook in low heat for 4 to 5 minutes
  11. Switch off the stove
  12. Add lemon juice and give the noodles a toss to spread the lemon juice evenly
  13. Garnish with Grated coconut and fresh coriander leaves


Quantity of Green chilli and Ginger may be changed as per your taste requirements[br]Veggies like Carrot, Beans, cabbage can be grated and added. Green Peas also can be added to add nutrition to the dish
