  • Preheat your oven to 350°F (175°C). Grease a baking pan with some oil or butter and lightly dust with flour or line with parchment paper.
  • In a large mixing bowl, combine the semolina and mango pulp. Mix well and let it sit for about 10–15 minutes. This allows the semolina to absorb some of the moisture from the mango pulp.
  • In another bowl, whisk together the sugar and vegetable oil until well combined. Add the milk and whisk again until the mixture is smooth.
  • Add the wet mixture to the semolina-mango mixture. Stir until well combined.
  • Sift together the all-purpose flour, baking powder, baking soda, and a pinch of salt. Gradually add this to the semolina-mango mixture, stirring gently until combined.
  • Stir in the white vinegar. This will react with the baking soda to help the cake rise.
  • Gently fold in the mixed berries and white chocolate chips or chopped white chocolate.
  • Pour the batter into the prepared baking pan. Smooth the top with a spatula.
  • Bake in the preheated oven for about 30–35 minutes or until a toothpick inserted into the center comes out clean. The baking time might vary slightly based on your oven and the size of your baking pan.
  • Once done, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
  • Slice and serve the cake. Enjoy your mango suji cake with a burst of berries and white chocolate!
