Another day of Vegan living and everyone is asking, what can you eat?

So I am continuing to blog about my first week as a Vegan and the question I hear more than any other is, what the heck can you eat? No eggs, butter, cheese, meat… what the heck does that leave? It’s true that it can feel very restrictive which for those of us who have dealt with food related issues, this can be a very difficult road to travel.
