On-the-Go Jar Soup
Fulfilling and flavorful soup you can bring to work

This soup has the gift of giving you a warm healthy feeling. By the time your done eating you feel fresh and energized from the raw vegetables, yet fully satisfied by the flavorful broth. A very easy prep of chopping veggies and simmering broth in the beginning of the week can lead to an easy, healthy and fulfilling lunch on the go!
1/2 C Chicken Broth
1/4 C Water
1 Bay Leaf
2 T Olive Oil
1/2 Lemon Juice
1/4 t Turmeric Powder
Handful Parsley, finely chopped
1/2 Red Bell Pepper, thin strips
1/4 Onion, thin strips
1 Mushroom, finely chopped
1/2 carrot, thin rounds
2 Cloves Garlic,finely chopped
Handful Spinach, thin strips
Handful Rice Noodles, uncooked
Pinch Chili Flakes
Handful Chicken, prepared shredded
Sriracha
To make your broth, heat your olive oil in a saucepan, add garlic and cook for 1 minute over medium heat. Add in chicken broth, water, lemon juice, Turmeric Powder, chili flakes and bay leaf. Bring to a boil, and then let simmer with lid for about 10–20 minutes, the longer, the more flavorful! Take off heat and let cool. Pour into microwave safe jar with lid.
Now, it’s time to build your soup. In another fairly large jar, begin by squirting a small amount of Sriracha in the bottom, add a handful of shredded chicken, rice noodles, onion, carrot, mushroom, bell pepper, spinach and parsley. Now put a lid on this tower of goodness, and refrigerate.
Refrigerate both jars for up to 3 days! Take this delicious concoction to work or prepare at home for a quick lunch. Simply heat the broth, pour over veggies and re-lid. shake it up, wait 3 minutes and enjoy!
