Shrimp Siu Mai with Beancurd skin

Dry beancurd skin/ 腐皮卷 is one of my must buys every time when I stop by my home country, it’s quite light; very easy to pack; it can storage for long time; it can also create to many alternative cooking methods, and it’s delicious… why not?

Today I made chicken and shrimp Siu Mai via beancurd skin, it’s sort of like Hong Kong Dim Sum, by using organic shrimp, in season spring onion and free range chicken mince, homemade dim sum could be more tasty and fresher rather than what restaurants would offer (and they are all closed right now anyway) 😌☺️
