I share your sentiments: if I were designing a chair as opposed to a web app, would I follow the same user-centered process?
As I’m sure you know, the digital design process takes a lot of cues from the design of physical objects. Books like “The Design of Everyday Things” are standard reading for any UX or product designer.
I like to think that our design training has prepared us to design physical things the same way we design digital ones: to solve people’s problems, not just look good.
