Peanut Butter Protein Balls

This is for my peanut butter and chocolate lovers!

If you’re like me, you have a sweet tooth and a weakness for chocolate and peanut butter. This can get you in real trouble on the calorie counting front if you’re not careful. I’m here to offer you an amazingly delicious alternative! Granted, they aren’t for frequent consumption, but are perfect for an occasional treat or post-workout yumminess.

Ingredients:

Filling-

2 scoops Vanilla Protein Powder

1 cup Peanut Butter or almond butter

1 cup Gluten Free Quick Oats

2 tbsp Honey

¼ cup Dark Chocolate or Bittersweet Morsels

Coating-

1 cup Dark Chocolate Chips

1 tsp coconut oil

Directions:

Mix above ingredients for filling. Chill mixed ingredients in the fridge for 30 minutes. Take out and roll into balls. Place back in fridge for 20 minutes. Melt chocolate chips and coconut oil in double boiler and coat peanut butter balls. Place on lined cookie sheet and chill in fridge 30 minutes then enjoy!
