It is estimated that 95% of our food is produced directly or indirectly from the soil. It’s no secret that soils are the foundation of our food system. Like all living things, our food needs a healthy environment to live and grow well. During the last decades of our agriculture, soils have been degraded, which has caused a low environment for the quality of food.

Today, we produce food with excessive application of synthetic inputs. But if we want to use and depend less on these synthetic inputs, it is necessary to change the form of production from a conventional…

Yes, we still in a pandemic, and is the beginning of September, I know. I know you are not even watching the news anymore because you well know this is not going to finish tomorrow, so what does it matter?

Probably you came here to read something that is not pandemic-related, but I have something for you. There is a missing piece in the puzzle of struggles of the food industry: culinary students.

Before Culinary schools existed, the apprentice system trained people who liked cooking, and usually, they started their careers at the age of 14. There wasn’t any institution…

Many of us may be thinking that doing compost is the best way to take advantage of vegetable scraps. However, there is a step before composting to think about to get the best of the scraps: BROTH!

Broths could be the base for many delicious recipes and are easy to do. But, why with scraps? Well, especially with organic vegetables or if they are from the house garden, scraps most of the time are the skin of the vegetable, and the skin saves the most nutritional value in the vegetables. By doing broths from the scraps, nutrients can still be…

Is not pesto sauce your favorite Italian sauce? Mine it is. I really enjoy pesto, especially for pasta, but also with home-baked sourdough bread or a glorious Mediterranean salad.

What makes pesto so incredible is combinations of a lot of nutrients. On one side, you have those beautiful, healthy fats, and on the other hand, a lot of vitamins and minerals by the basil and garlic, and finally those amazing proteins by the Parmigiano-Reggiano cheese.

The name pesto comes from the Genovese word “pestâ,” which means to pound or to crunch. This sauce originating in Genoa, around the 16th century…

Guatemala has 22 different languages of Mayan origin, two non-Mayan, and two minority languages of African and South American origin. Yet, our official language is of European origin: Spanish. Because the highest group, where I belong, are mestizos who are Spanish speakers. Due to my Mestizo privilege, I never had to worry about my language, while the others have to. However, during my childhood, I didn’t notice the extra efforts that indigenous people had to face by learning our official language to incorporate into the Mestizo-dominant society. Most Guatemalans, including indigenous people that had to switch to Spanish, our concern…

He cultivado en…

Nowadays, meat and ethics are not designed to agree in the same sentence. With veganism on the peak, many meat-eaters are considered unhealthy and unconscious.

However, how true is this?

A little bit of eight years of my life

I have been vegetarian for eight years in a row. First, I was that picky teenager who never liked meat. Over the years, I learned about animal cruelty, and I knew I had even more reasons for my vegetarianism. I began my culinary career, and my main goal was to be a sustainable vegetarian chef. That gave me a curiosity about…

It is common to hear about intuition, although maybe not with that word. Sometimes when we are struggling with decisions, we have that inner voice explaining the reasons why this decision is better than that one. Occasionally, we might say that we will follow what gives us the best feeling; well, perhaps that is our intuition talking to us. Intuitive actions are also bodily reactions, but we do not frequently notice this kind of intuition because it is a natural disposition that we have. Like the animals we are, we depend on our intuitive actions, even if we cannot notice…
