“Happy Meal – Happy Weekends 👪”
It’s not an easy task planning what to cook especially if you have a little fussy eater at home.
For this weekend, I’ll be sharing 2 recipes – 1. my son’s favourite “Lotus Root & Peanuts soup with pig tail” and 2. “Sizzling Tofu”.
Lotus Root & Peanuts Soup with Pig Tail – 莲藕花生猪尾汤;

Place all ingredients in the inner pot of the pressure cooker. Add in water and cover the lid. Adjust the pressure valve to the sealed position.


Select “Soup” mode and set pressure timer to 30 minutes. When the pressure has been fully released, add the following seasoning and stir well:
- Light Soy Sauce
- Huadiao Wine
- Pepper Powder

Delicious and nourishing soup is ready in just 40 minutes! Pressure cooker really make life easier and time saving!
Another dish that I’ve prepared –
Sizzling Tofu 铁板豆腐;

Firstly, fry the egg tofu till golden brown and set aside.

Then, fry chopped ginger and garlic till fragrance. After which slowly add in marinated minced pork, button mushrooms and carrots. Add some sugar, salt and pepper to adjust to your taste. Mix a bowl of water with cornstarch to thicken the sauce. Switch off the heat and place it aside.

On a clean pan, fry the beaten eggs and add in the those fried ingredients and egg tofu. And your sizzling tofu is ready to be serve. (This dish should be serve on hotplate and because I didn’t have one therefore I serve it on a normal plate 😅)
