To make the vada, boiled potatoes are mashed with spices such as ginger, garlic, green chili, turmeric, and coriander leaves. This mixture is then shaped into small patties or balls and deep-fried in wheat batter until golden and crispy. The pav is a small, square-shaped bread roll, similar to a dinner roll or slider bun.

The vada pav is sliced into halves and lightly toasted with a little butter. Then, chutney is spread on it, often a combination of mango and green chutney. The vada is placed inside the pav, and this sandwich is typically served with additional chutney.

Vada pav is known for its delicious and spicy taste. It is a popular and affordable snack that is often consumed as a quick meal or as a street food option. Vada Pav Recipe Ingredients:

For Vada (Potato Dumplings):

4 large potatoes, boiled and mashed

1 tablespoon oil

1 teaspoon mustard seeds

1 teaspoon cumin seeds

1 teaspoon ginger paste

1 teaspoon garlic paste

2–3 green chilies, finely chopped

A few curry leaves, chopped

1/2 teaspoon turmeric powder

Salt to taste

Oil for deep frying

For Batter:

1 cup gram flour (besan)

1/4 teaspoon turmeric powder

1/2 teaspoon red chili powder

A pinch of baking soda

Salt to taste

Water as needed

For Assembling:

8 pav buns

Butter for toasting

Green chutney

Tamarind chutney

Garlic chutney (optional)

Thinly sliced onions (optional)

Coriander leaves for garnish

Vada Pav Recipe Instructions:

In a pan, heat 1 tablespoon of oil. Add mustard seeds and cumin seeds. Once they start spluttering, add ginger paste, garlic paste, chopped green chilies, and curry leaves. Sauté for a minute.

Add turmeric powder and mashed potatoes. Mix well and cook for a couple of minutes. Season with salt and remove from heat. Allow the mixture to cool.

Once the potato mixture is cool, divide it into small balls and shape them into patties.

In a mixing bowl, prepare the batter by combining gram flour, turmeric powder, red chili powder, baking soda, and salt. Gradually add water and whisk until you achieve a smooth, thick consistency.

Heat oil in a deep pan for frying the vada. Dip each potato patty into the batter, ensuring it is coated evenly, and carefully drop it into the hot oil. Fry until the vada turns golden brown and crispy. Remove and drain excess oil on a paper towel.

Slice each pav bun in half, horizontally. Heat a little butter on a griddle and toast the pav buns until they turn light golden brown.

To assemble, spread green chutney and tamarind chutney on the inside of the pav buns. Optionally, you can also spread garlic chutney for an extra kick of flavor.

Place a vada in between the prepared pav buns. Garnish with sliced onions and coriander leaves if desired.
