It’s not that I want every plate of food I prepare to be an artistic masterpiece — I don’t exactly have time for that — but I do worry about my little Alejandro and that he eats healthy. I know I’m not alone in my efforts, and this is why I would like to share five healthy, delicious breakfast recipes for kids.”
For weekdays (when we’re just too busy!)
Baby food made of bananas and oatmeal: This recipe is simple and healthy. Mash the banana until it adopts the consistency of baby food, and then add the oatmeal. You can accompany it with a cup of milk.
Apple Quesadillas with cream cheese: The tortillas used in Mexican burritos can also be used to make delicious and healthy breakfasts. Prepare the tortilla with a bit of cream cheese, apple slices, and a touch of cinnamon. Then, put it in the oven until the cheese melts. It’s simply irresistible!
Arepas, or heart-shaped sandwiches: A classic breakfast that is even more appetizing in the shape of a heart. Experimenting with shapes will make your food more appetizing for your kids. Fill up the sandwich with cheese or turkey, and accompany it with a delicious cup of natural fruit juice.

Oatmeal pancakes accompanied with fruit and turkey:
I have yet to meet a kid who dislikes pancakes, and my child is no exception. So, when I make this dish for my son, I take advantage of the situation and add a bit of oatmeal, so that Alejandro gets fiber in a natural form. In addition, when I serve these pancakes, I add a touch of honey. The cakes taste delicious with banana slices and turkey, too.
Add to the blender: 1 cup of milk, 2 eggs, and flour until the consistency is somewhere in between runny and thick. My trick is to stop adding flour once the circle is about to close in the blender. At that point, stop blending and add oatmeal to the mix (however much you want). Then, spray a pan with PAM cooking spray or half a teaspoon of butter. Use a tablespoon to add the mixture to the pan.
This is a variation of the pancake recipe. Just substitute the oatmeal for sliced apples.
