How to make Yemeni Sayadieh

Yemeni Sayadieh (Serves 5 people)

Ingredients:
3 lbs Fish (Tuna), cut into filets
2 cups Basmati rice
3 tablespoons tamarind paste
2 heads garlic
4 pods cardamom
1 cup tomato paste
2 teaspoons salt
2 teaspoons baharat mix
1 teaspoon ginger powder
1 teaspoon tumeric
2 teaspoons cinnamon
2 cups plain yogurt
1 bunch cilantro, chopped
½ cup vegetable oil
3 potatoes
3 onions

To Prepare the fish:
1. Preheat the oven to 400 degrees.
2. Mix tamarind paste with 1 cup hot water. Let sit for appx. ten minutes until it melts. Stir and dissolve.
3. Slice the onion. Quarter the potatoes.
4. Combine the garlic and cardamom in the food processor. Blend into a paste.
5. Heat oil in a large skillet. Fry fish filets on both sides until the color turns red. Add potato and onion. Add garlic paste.
6. When the potato is cooked, add tomato paste and spices.
7. Add tamarind juice.
8. Add yogurt and cilantro.

To prepare the rice:
1. Soak the rice in cold water for appx. one hour. Rinse well and drain.
2. Put rice in pot and cover with water by one inch. Bring to a boil.
3. When the water comes to a boil, remove from heat and drain.
4. In a large baking dish, layer rice, fish and sauce, covered by another layer of rice.
5. Cover baking dish with foil and bake for 20 minutes.

Spicy Chutney
Ingredients:
2 jalapeno peppers
2 tomatoes
2 cloves garlic
1 bunch cilantro
½ teaspoon salt
juice of one lemon
