Ingredients:

  • 1 lb lamb, goat, chicken, or buffalo meat, cut into bite-sized pieces

  • 2 tablespoons ginger-garlic paste
  • 2 tablespoons cumin powder
  • 2 tablespoons coriander powder
  • 1 tablespoon turmeric powder
  • 1 tablespoon red chili powder
  • 2 tablespoons ghee or clarified butter
  • Salt, to taste

Instructions:

  1. In a large mixing bowl, combine yogurt, ginger-garlic paste, cumin powder, coriander powder, turmeric powder, red chili powder, and salt.
  2. Add the meat to the bowl and mix well to coat the meat with the marinade. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 4 hours or overnight for best results.
  3. When ready to cook, preheat the grill or oven to 400°F.
  4. Thread the marinated meat onto skewers and brush with ghee or clarified butter.
  5. Place the skewers on the grill or in the oven and cook for 8–10 minutes, turning occasionally, until the meat is cooked through and slightly charred on the outside.
  6. Remove from the heat and serve hot with mint chutney or tomato achar (pickle).

Sekuwa is usually served with puffed rice, sliced onions, and a side of tomato achar. It can be enjoyed as a snack or as a main dish with rice or naan bread. Sekuwa is a must-try dish for anyone visiting Nepal or looking to explore Nepali cuisine.
