Here’s a traditional dosa recipe:

Dosa

Ingredients:

1 cup rice (preferably parboiled)
1/4 cup urad dal (split black lentils)
1/4 teaspoon fenugreek seeds
Salt to taste
Water for soaking and grinding
Oil or ghee for cooking
Instructions:

  • Wash the rice, urad dal, and fenugreek seeds separately and soak them in water for about 4-6 hours. Make sure to use enough water to cover the ingredients.
  • After soaking, drain the water from the rice, urad dal, and fenugreek seeds. Transfer them to a blender or a wet grinder. You can also grind them in batches if needed. Add a little water and grind to a smooth paste. The consistency should be similar to pancake batter.
  • Once the batter is ground, transfer it to a large bowl. Add salt to taste and mix well. Cover the bowl with a clean cloth or lid and allow the batter to ferment for 8-12 hours. Fermentation helps in making the dosas crispy and light.
  • After fermentation, the batter will rise and become frothy. Give it a good mix. If the batter is too thick, you can add a little water to adjust the consistency.
  • Heat a non-stick dosa tawa (griddle) or a flat pan on medium heat. Once the pan is hot, take a ladleful of batter and pour it in the center of the pan.
  • Using the back of the ladle, spread the batter in a circular motion to make a thin dosa. You can make it as thin or thick as you like. Drizzle a little oil or ghee around the edges of the dosa.
  • Cook the dosa on medium heat until the edges start to turn golden brown and crisp. Flip the dosa using a spatula and cook for another minute or so on the other side.
  • Once the dosa is cooked, transfer it to a serving plate. Serve hot with coconut chutney, sambar, or any other accompaniments of your choice.
  • Repeat the process with the remaining batter to make more dosas. Make sure to mix the batter well before making each dosa.

Note: The fermentation time may vary depending on the temperature and climate. In colder climates, it may take longer for the batter to ferment. Also, if you prefer a softer dosa, you can add a little cooked rice while grinding the batter.
