Taco Soup

  • 1lb ground turkey (or meat of choice)
  • 1 pkg of Hidden Valley Ranch Dressing mix or use homemade mix, recipe included below
  • 1 pkg taco seasoning or use homemade mix, recipe included below
  • 2 cans of Rotel
  • 1 can kidney beans untrained (I use no salt added)
  • 1 can black beans untrained (I use no salt added)
  • 1 can of corn OR 1 pkg of frozen corn whichever you prefer

Ranch Dressing Mix Recipe

  • 2 tablespoons dried parsley
  • 1 1/2 teaspoons dried dill weed
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons dried onion flakes
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried chives
  • 1 teaspoon salt

Taco Seasoning Mix Recipe

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes

*For this soup I use the whole batch of seasoning mix for both the ranch and taco seasoning.

**If using the taco seasoning in other recipes use at your discretion. It does keep nicely in a sealed container.

Dump all of the cans together in crockpot, corn if using frozen, add ranch mix, and taco seasoning. I prefer to put my Rotel in a mini food processor before adding, but that’s a personal choice. Brown your meat in skillet, drain, and add. Cook on high for an hour then keep on low or warm depending on your crockpot for 4 hours. Sprinkle cheese, or in my case use Follow Your Heart or Violife vegan cheese, on top and serve with tostitos or crackers!
