Cuisine Of The Ottoman Empire

Ottoman Empire had embraced many different cultures and these cultures made contribution to Ottoman Empire. Even today a variety of Ottoman foods and desserts are eaten. Ottoman cuisine still has a special place in the world cuisines. Here is some of Ottoman foods and cultures…
1.Ottoman meal culture had important features as Ottoman cuisine.
There weren’t dining rooms and dining tables at the Ottoman palaces. Foods were eaten on the floor table at the palaces, mansions, houses where local people live in.
2.Sultan’s foods generally made in special kitchens which were called “Kuşhane” and foods were presented by chief taster who was responsible for food presantation.
The foods that for Sultan were carried on the trays. Especially in the period of II. Abdülhamit, after foods were put on the trays, foods covered with fabric. Decanters, which fulled with water and sherbet, were sealed.
3.Only family members could had eaten together with Sultan.
Special foods were not only for Sultan at the same time Sultan’s wife, sons and some of important personalities could had eaten special foods. There were notes on the Fatih Lawbook about where and with who viziers and grand viziers had eaten food.

4.In the Ottoman family structure table manners were really important.
Family had table etiquette in Ottoman Empire and all of the family members had to be at the dinner at the same time.
5.Servants had brought pitcher and basin. People had used these thing for washing hands before ate food.
If someone had left the dinner or had been drinking water the other waited for him or her come back to the dinner or finished to drink water. Nobody had eaten food during that situation.
