WEATHER- FATS AND VEGETABLES: Many ask me this question and here is a short and logical answer. In warm weather, little fat is needed, and Mother Nature and Mother Earth provide us with fresh vegetables to replace the root vegetables of the winter, which consist largely of best starches and sugars which are readily converted into heat for in cold weather, especially in high altitudes or latitudes more such vegetables are required to keep the body warm and healthy. Plants and vegetables have many processes for exchanging cold and hot temperatures. One not commonly examined is the constituents of fats in plant cell tissues as it relates to cold and heat acceptance.

One interesting thing to note here is the chief diet of the Eskimo is oil and because of this reason, plenty of fish and fish products are very essential to keep burning fuel and energy expenditure in the population in Alaska or northern part of that Earth. In the winter healthy sugar and starches of bread and root vegetables are readily converted into fuel. Fat is the most concentrated form of fuel; it is more readily oxidized which is an integral part of digestion (Agni) and life force. This is why healthy leafy vegetables are preferred in summer while healthy root vegetables are preferred in winter while certain root vegetables like fresh ginger and turmeric can be good the whole year around and an integral part of my therapy. Ayurveda is nothing but the best science of seasonal selection of vegetables, dairy, meat etc. on elemental and quantum level but its understanding is still lacking. _ Dr. Bharat Vaidya
