In my experience, it’s rare to find an engineer who can force themselves to forget what they know about their products or interfaces, to the extent that they can put themselves in the shoes of ‘the other.’

I agree, but… it is as well rare to find designers who can force themselves to think about REAL technological constraints (not the ones caused by the absence of empathy from engineers). Not everything is feasible, and a good designer knows she must balance desirability, feasibility and viability. And she knows that creativity is built around constraints. My 2 (euro)cents… :)
