Ingredients

  • 1 cup old-fashioned oats
  • 1/2 cup peanut butter (or almond butter for a twist)
  • 1/3 cup honey or maple syrup
  • 1 cup crispy rice cereal
  • 1/2 cup chopped nuts (your favorites!)
  • 1/4 cup dried fruit (cranberries, raisins, etc)
  • 1 teaspoon vanilla extract
  • A pinch of salt (optional but recommended)

Instructions

Before we start, line a square baking pan with parchment paper

Step 1 — Mix the Dry Ingredients

Combine oats, crispy rice cereal, chopped nuts, and those dried fruits in a big bowl.

Step 2 — Warm Up the Peanut Butter

Mix peanut butter and honey (or maple syrup) in a saucepan over low heat until it’s a smooth, gooey blend. Take it off the heat and stir in vanilla extract and that optional pinch of salt.
