I love Scotch Eggs.

They are delicious cold or warm. They make delicious snacks for a picnic, a brunch or even a breakfast.

They will also fit into a keto diet. They are basically just eggs and meat, high in fat and protein with trace nutrients from the eggs, they may be rolled in bradcrumbs or they may be just left unbreaded that is up to you, the cook.

The Scotch Egg was invented in the grand old days of the Mail Coach in Britain. Orginally they were sold for the travelers on the coaches. The eggs, hard boiled then wrapped in a layer of pork sausage meat.

An interesting variation I have found is to wrap an hard boiled egg in ground beef, it makes the Scotch egg slightly different, more like a steak and egg meal.

The video shows me making the more traditional Scotch Egg in the oven, mine being baked rather than deep fried, the technique for the ground beef version is exactly the same, just swap ground beef for sausage meat.
