Great solution Terrence, but I think the fact that this ever worked was a bug in iTunes or iOS that has since been patched. Now (iOS 10.3.3) when you try to do the restore from iTunes, you’ll get an error message saying the backup is corrupt. I believe this is because it does a checksum on the files being restored and quits when it finds one that has been modified — which it probably should be doing.
