COVID-19 has officially landed in the United States. It’s been wreaking havoc in China since December of last year, and it’s finally made its way stateside. Which is why SNL spoofed the virus through a skit featuring the hot new show on Netflix, Love is Blind.

While it’s all fun and games until someone gets hurt kind of situation, there have been a lot of people getting hurt. Not only is this coronavirus taking people’s lives, but it’s also causing a whole different disease: xenophobia.

This isn’t just happening in the United States, other Asian countries are also closing their doors to Chinese people. Taiwan has barred mainland Chinese from traveling to their islands. Japan and South Korea have, as well. But I’m not here to talk about the xenophobia between Asians, I’m here to talk about the xenophobia against Asian-Americans.

The team of Uprooted in Medellín, Colombia

This semester, I had the the humbling opportunity to travel to Medellín, Colombia, in March to tell the stories of Venezuelan migrants who have left everything to seek better lives in another country. The people we met over our ten days were so warm and welcoming and above all, they remained hopeful that the would one day see their country again. I was truly touched and inspired by their optimism and hope.

It might feel like the problems that Venezuelans are facing right now have nothing to do with your own lives. You may think, I’m not living in South America or I don’t have anyone personally affected by this crisis, but that’s the wrong way to think about this issue. …

My vegan brownies turned out pretty well — and they were a hit with my classmates! This is the Minimalist Baker recipe!

So, I don’t know about you, but I procrastibake. No, that wasn’t a typo, it’s a genuine word that people have now coined to talk about using baking as a means of shirking other responsibilities. And I have been guilty of procrastibaking quite frequently during senior year. It’s like my brain just doesn’t want me to work so instead, I bake.

I’ve made everything from box cakes to brownies to (semi-vegan) homemade mini cheesecakes. I’ve also learned how you can turn marshmallows into icing (because I forgot to buy icing), cooking oil and almond milk to make heavy cream (because I forgot to buy heavy cream) and flax seed and water for eggs (because I wanted the cupcakes to specifically be vegan). …
