Lemon icebox pie is a sweet desert made up of lemon juice, eggs and condensed milk all in a pie’s crust. It is the variant of lime pie and doesn’t require much baking as it sets critically with an acid of lime. It is very quick and easy to make without heat in summers and can be stored in the ice box to give it a soothing taste until it is served. It was also named after ice box in which they are stored in.

Icebox pie dates back to the time in South America when there was no electricity at homes and thus there were no refrigerators. Americans didn’t have city life to live in and lived in farms. The majority of the homes didn’t have electricity until World War II. They became popular in the 1950s and 60s when bakers started making new recipes and women felt free from kitchen duties. It also helped women in summers when there was heat on the top and they didn’t have to bear the heat of stove for this specific dish. It is considered as a South American traditional cuisine.

The best thing about the lemon ice box pie is that it doesn’t have any layers or lines of cakes in between. It is just set off a thick crunchy crust and settled up with lemon flavored whipped cream from top to bottom. It melts in the mouth as if some kind of smooth universal tart is melting on the tongue. It doesn’t require much of a hard work, just layering on one another and you’re done! Ingredients:

For Crust:

For Pie:

• 8-ounce container whipped cream
• 8-ounce package cream cheese
• 14 ounce can condensed milk
• 1⁄2 cup lemon juice
• 1 teaspoon vanilla extract

Directions:

For crust- Mix all the ingredients of crust into a medium bowl and press evenly into pie plate. Refrigerate for 1 hour.
For pie- Mix whipped cream, condense milk, lemon juice, cream cheese and vanilla extract. Blend and mix all well until it is smooth. You can add or subtract lemon juice according to you taste. Pour it into the graham cracker crust and refrigerate overnight.

Decoration and Packaging:

Variations are limitless. Lemon icebox pie shipping boxes are usually decorated with whipped cream layer. To add on, it is also decorated with some fruits like blueberries and cherries to give more color to it. Furthermore, they are even decorated with layers biscuits and raw lemon slices. Dry fruits are also used to decorate it uniquely.

As lemon icebox pies are made in refrigerators, there is a certain need to freeze them all the time until served.
