If you‘re still trying to use the bag up, may I recommend Lemony Kale and Quinoa: https://www.budgetbytes.com/2015/01/lemony-kale-quinoa-salad/. I’m biased in that I love kale, but it definitely gets tenderer and easier to eat (and digest) when you cook it longer. I’ve bulked this recipe up with roasted sweet potatoes, squash, and random other veggies and it’s A+ every time.
