Why I’m bullish on fake meat
Today I went out for dinner with my family. I ordered the pork ribs.
They were saucy, sticky, and undeniably meaty. As I was eating them, I couldn’t help but think: ‘wow, I wonder if this will be on the menu in 100 years.’
I admit, that is a pretty weird thing to think at a family dinner. But I was genuinely curious. Earlier this week, I wrote a short analysis about the rapid spread of veganism.
My theory goes like this: vegans can’t eat meat, but meat-eaters can eat vegan. When a meat-eater has to eat or cook with a vegan, there’s a small chance the meat-eater might become more vegan, but not vice versa. Vegans are now numerous enough (more than 5% of the population) that over a few generations they could grow to dominate the market for food.
That might seem like a terrible idea to you now.
And I agree! I love meat, cheese, and milk. I will never give them up. You would have to pay me a truck load of money turn vegan today.
But that doesn’t mean I won’t turn vegan eventually. In the future, there’s a good chance you’ll be able to able to keep your diet pretty similar while going vegan.
One of the reasons why veganism has become so popular is the rise in plant-based alternatives to animal products.

In the last ten years, it’s become a lot easier to switch to a diet without animal products. With the advent of good plant-based alternatives to meat, the barrier will all but vanish.
Earlier last year Ezra Klein, the CEO of Vox News, predicted there will soon be a time when humans will look in horror at how we used to kill animals for food.
I assure you, I’m a long way from that point yet. My pork ribs were amazing.
But, there’s a part of me that’s starting to think he’s right.
Because fake pork ribs will be amazing, too.
