Basmati rice 200 gm

Ghee or Butter 3 tbsp

Sugar 90 gm

Cherry 100gm

Dry fruits 20 gm

Saffron Threads 1/2 tbsp

Warmed Whole Milk 2 tbsp

Green Cardamom Pods 4

Clove 3–4

Water as required


Put the milk in a cup and crumble in the saffron, then set aside for 3 hrs. Wash the rice in several changes of water, then drain. Leave it to soak in 1.2 litres of water for 20 minutes. Now, place rice in a pot, add some water about twice the level of rice. Set on the stove and leave to cook. When the rice is parboiled, pour it in a sieve. Leave the rice in the sieve to drain off all the water.

Heat the ghee/butter in a pan over medium heat. Fry the dry fruits in the ghee and put them aside. In the same pan put in the cardamom and clove and stir them about for a second. Now put in the rice. Stir the rice gently for about 3 minutes, reducing the heat slightly if it begins to catch. Add cherry and sugar Now increase the heat back to medium and gently stir and cook the rice until all the water is absorbed. Pour in the saffron milk and stir in the fried dry fruits. Cover very tightly and put the pan in the oven or over a griddle on gas for 15minutes. Remove the rice from the oven and stir, remove the clove and serve.
