Adult Yeasts for Big Beers
In order to use up my remaining pilsner & caramel malts as well as a selection of hops I have from my last brewing sessions, I’ve ordered WLP099 and WLP575 from the lovely people at Hop and Grape
The plan is to make a massive starter and kick off with the WLP575 and then when the going gets tough, carry on with the WLP099 and additional sugars.
Reading up on these, it looks as if this might give a nicely balanced profile with a high ABV. I’ll also be following some tips from this fascinating “Cause of Death” article on brewing above 20%.
I just need to take a full inventory of what I have remaining and get down to work with Beersmith to see what I can do.
