It’s tough out there when cheap food undercuts “clean food.” It doesn’t make sense when you think about—something simpler and natural should be cheaper, right? Obviously I’m oversimplifying, but we too often bandaid our policies and subsidies, instead of taking a step back and trying another approach.
I’m assuming you have, but if you haven’t: check out the history of WonderBread. It highlights some problems you’re speaking to. Not to be too hipster, but Michael Pollan summarizes nicely on Netflix’s “Cooked”, the Air episode.
