It’s creamy, warm, hearty, sweet-but-not-too-sweet, with a little tanginess from the fresh cranberries, and basically tastes like Christmas in a bowl. But the best part? IT’S READY WHEN YOU WAKE UP! Sorry about the shouting. This recipe has me super excited.
Let me tell you a little about what Christmas Eve is like at this house. 99% of the time, I still have wrapping to do and/or toys to assemble. I always think it’s going to take an hour or so, but every single time it ends up taking at least four hours. And of course I can’t start until I’m totally sure that the kids are asleep…so yes, Christmas Eve is usually a pretty late night for me and Tim.
Guess what I absolutely never feel like doing when I’m finished the wrapping and assembling extravaganza? Putting together a make-ahead breakfast. I want breakfast ready on Christmas morning, but I’m usually too tired (or lazy) to do it the night before. All of that is changing with this Crock-Pot® Slow Cooker Cranberry Eggnog Oatmeal. You need exactly 3 ingredients and less than five minutes to make this happen.

The slow cooker does a wonderful job cooking steel cut oats to perfection. They get creamy, but not mushy. My oatmeal was cooked perfectly after 4 hours on low.
If you’re like me on Christmas Eve and get minimal sleep, this is perfect for you. I did test this to see how it would hold on warming mode, also, and I found it was still great after 3 hours on the “Keep Warm” mode. It got thicker, and slightly more hard around the edges (The hard edges are so delicious and add a great texture variety, so that’s not a bad thing!), but did not burn at all.
Even if it’s thicker than you like it in the morning, you can easily add more eggnog or milk to your bowl.
YUM! Oops. Sorry, I didn’t mean to shout again, but good food gets me excited. I also added some slivered almonds to our bowls for a little crunch, but that is an optional addition. On Christmas morning, my kids might get a special treat of some white chocolate chips added to their bowls. Maybe.
We don’t consume a ton of dairy around here, but every Christmas my husband loves to indulge in eggnog. It’s one of his favorite Christmas traditions. I couldn’t resist trying this oatmeal with eggnog. If you can, find a high-quality eggnog. The kind we got comes from a local Ohio farm that allows their cows to grass feed during the warmer months, does not use GMO feed or treat their cows will antibiotics or hormones, and uses organic farming practices. I always say, if you’re going to consume dairy, get the best you can find.
If you don’t have a Crock-Pot® brand slow cooker, I highly recommend them! I have the 6-quart slow cooker with a stovetop safe cooking pot and absolutely love it. They also make great gifts.

- 4 cups eggnog
- 4 cups water
