You should never use all caps, or else the labels would be difficult to read and much harder to quickly scan, as there are no differences in character height any more.

This is not really true.

It’s OK to use ALL CAPS for things that are usually written in ALL CAPS, such as ZIP code.

Things written in ALL CAPS are harder to read because they are less familiar. It’s not about the shape of the characters, it’s about what is familiar to us.
