Cakey Brownies Recipe
The recipe is adapted from Laura in the Kitchen.
Fun Fact: There are 3 basic types of brownies. They are cakey, chewy, and fudge brownies.
Prep time: 10–15 mins
Baking time: 30 mins
Tools: standing mixer with paddle attachment OR simply a large mixing bowl with spatula
Dry ingredients include:
1- Chocolate chips: 1 cup. Melted either in microwave or over a double boiler
2- Caster Sugar: 3/4 cups
3- Instant Espresso Powder: 2 tsp
4- Cocoa Powder: 1 tsp
5- Salt: 1/4 tsp
6- Baking Powder: 1/2 tsp
7- All Purpose Flour: 1/2 cup
8- Chopped Walnut: 1/2 cup
Wet ingredients include:
1- Unsalted Butter (softened at room temperature): 1/4 cup
2- Corn Syrup: 1 tbs
3- Eggs: 2
4- Vanilla Extract: 2 tsp
5- Milk (lukewarm): 3 tbs
1- Oven: Preheat the oven to 375 F degrees or 200 C degrees
2- Baking tray: Place baking sheet on the baking tray.
3- Dry ingredient mixing bowl: Mix together the AP flour, baking powder, salt, instant expresso, cocoa powder and set aside
4- Wet ingredient mixing bowl: In a large bowl, whisk together the butter, sugar & corn syrup. Then add the eggs, vanilla extract, and milk to the mixture and mix until well incorporated.
Then add the melted chocolate to the mixture and whisk till thick and creamy
5- Dry & Wet ingredients together: Add the dry mixture to the wet one and mix until all are well blended. Then add in the chopped walnut as the last step.
6- Scrape the batter into the prepared pan and bake it for 30 minutes. Cool completely before cutting.
