Roasted Pork Belly Recipe
The recipe is adapted from Danangcuisine.
Prep time: 30 mins
Cooking time: 1 hour
1- Pork belly: 1kg. Rinse and pat dry with paper towel
2- Salt, black pepper, and sugar
4- Rice vinegar
1- Preheat the oven to 200°C/ 400°F
2- Prepare mix #1 for marinating the meat part of the pork belly including salt (1 tsp), pepper (1/2 tsp), sugar (2 tsp), and five-spice powder (1 tsp)
3- Prepare mix #2 for scrubbing the skin part of the pork belly to make it crispy including salt (2 tsp) and rice vinegar (1 tsp)
The roasting process is divided into 3 parts. 20 mins/each
4- Rub prepared mix #1 to the meat part only. Best is to have it marinated in the fridge for 3 hours or overnight. Even 30 mins will do the work too :). Then place the pork belly (with the skin side down on a baking tray lined with aluminium foil). Roast for 20 mins.
5- After 20 mins, take out the tray, flip the pork over (now the skin part is facing up), brush prepared mix #2 to the skin park. Put the baking tray back to the oven for another 20 mins.
6- After roasting the second time for 20 mins, you will start seeing the skin part being dried up with small bubbles starting appearing on the skin. Take out the tray, and brush prepared mix #2 to the skin part to create crackling/crispy effect to the skin :D. You even can use the fork to poke on the skin, which would help the bubbles on the skin being blown up even more creating extra crispiness. Put the tray back into the oven and roast for the last 20 mins.
Total roasting time is 1 hour. And now you have it..amazing roasted pork belly crackling in 1 hour. This can be served with rice, and pickles.
