Fast and healthy pancakes
I woke up this morning and didn’t quite know what I wanted to eat, nor did I want to spend too long in the kitchen to prepare something.
For these moments I have a backup supply of protein pancake mix which I mixed with some chia seeds for added healthy fibres. You can mix the ingredients any way you prefer (a manual shaker is easiest for me).
- 300 ml of unsweetened soy milk

- 1/4 cup of chia seeds (https://tinyurl.com/yb3u45o2)
- 1 teaspoon of coconut milk to put in the pan
- 10 minutes of your time
I can provide these on request. Summarized they are high in carbs, protein and fibre but low in sugar.
