Most coffee machines do not boil water. Instead, they heat water to a temperature just below boiling, typically between 195°F and 205°F (90°C to 96°C), which is ideal for brewing coffee. Drip coffee makers, single-serve machines, and espresso machines all heat water to this range. Boiling water can scald the coffee grounds, resulting in a bitter taste. However, stovetop coffee makers like the Moka pot do bring water to a boil to create steam pressure for brewing. In general, proper brewing temperatures are essential for extracting the best flavors from coffee grounds.
