Glad you found it interesting! Yeah, I think lines take up so much space because the rate at which people take orders is less than the rate at which people enter the line. As kiosks improve and people are more comfortable with them, perhaps lines will be shorter. Then we can allocate more space for people sitting down and enjoying food.
Organization of people through signage and design is a really interesting challenge. You see it in subtle ways in subway cars, where the spacing of people in the middle of cars mirrors the spacing of hand straps. I wonder if by having more tightly-packed straps, we could fit more people on trains. Then I wouldn’t have to miss the train when it’s full!
Certainly there are other solutions like having more frequent trains or longer trains, but I think small changes can have impacts.
