I wanted to build something that was small and intimate, and for it to have a really nice patio. We did a Kickstarter campaign, and once I had all that support behind me it was easy to say, ‘OK. All these people are excited for me and they’re motivating me.’ So I felt inspired to go through with it all. My husband is a woodworker and he has his own furniture business. We found an old 1950’s trailer that was just the right amount of crappy we needed, because we were going to gut everything out anyways. We fixed it up and built it up together over the next 6 months and redesigned it as a coffee shop. When people walk inside — if they’ve never been in an Airstream or a Spartan before — it can really be a unique experience. Flitch is a small place, where people talk to each other, which is exactly what I signed up for. It’s a space that’s inviting to anyone!

Erica’s Flitch Order: If you like something sweet, then try our Maple Latte. It’s amazing, and tastes just like ice cream.

Erica’s Austin Must: Barton Springs is a magical place that doesn’t exist anywhere else. So definitely go there. Otherwise, Bufalina is really laid back and great for wood-fire pizza and wine, and Ramen Tatsu-Ya is amazing for ramen. And the Brew & Brew has grown into a cool hub of its own, with tons of good beer and rotating coffee.
