“I was a lawyer, and was just getting burned out on the work and the culture of the law environment. Honestly, it was just kind of fucked up and kind of boring — just billing hours got old real fast. I fell in love with home brewing around that time, and tried to raise money to open a brewery starting in 2008. It was just when the economy was tanking, and everyone told me it was a terrible time to start a business. I’m sure there was some merit to that. But I just kept looking. Ultimately, we found this property on a ranch and built our farmhouse brewery. Today, our philosophy centers around making a beer that’s unique to a particular time and place. Using the time of year, the ingredients, the balance of microbes in the air to make something that’s different, fun and relevant. We try to make things that you can’t find anywhere else, and we try to incorporate the local environment and the seasons to make our beers unique. That’s what gets me excited.”

Jeffrey’s Jester King Order: “Our SPON Méthode Gueze. It’s spontaneously fermented and it took us 3 years and 9 months to make it!”

Jeffrey’s Austin Must: “I always tell people to head to Hamilton Pool or Reimer’s Ranch. There’s tons of outdoor stuff there, like hiking, climbing and mountain biking. Or get a Guy Smiley Mild beer at the The Draught House on Medical Parkway.”
