Eat The Rainbow
In honor of The Solitary Cook and her idea to cook a meal together as a community in action after the events in Charlottesville, Va.

Cook, I’ve just today seen your post, after having made dinner. But was inspired and wanted to join in. Fortunately, I had everything I needed on hand.
Yesterday, from the garden, I picked tomatoes (red) carrots from the freezer (orange), the crookneck (yellow) and zucchini (green) squash has petered out but I had some in the freezer I picked a couple of weeks ago, green bell peppers (from the garden) also for green, green (blue) beans from the freezer, and Japanese eggplant from the garden (indigo).
I tossed it all together with some olive oil, a bit of salt and pepper, freshly ground Italian herbs and garlic from the garden.
It’s all in the oven baking now. When the vegetables are done, I’ll toss some panko bread crumbs with olive oil and parmesan cheese for the top, sprinkle it on and a few minutes under the broiler until golden brown to finish. It smells so good. It’s ready!

Oh Cook, I wish you could smell it! I can’t wait to have it tomorrow for lunch!
