The most effective response to this legally, is to put an Data protection request into the companies with the screens (not ORB), looking for all data they have gathered on you. You can also report them to the data commissioner for not displaying contact details of the data controller with a sign saying that they are gathering video data on the premises. The Law is quite clear on this in Ireland, and provides you with a fairly straightforward path to redress if it is not complied with.
