Ingredients:

  • 1 head cauliflower
  • Two cups of cheese
  • ½ teaspoon paprika
  • Two parchment-lined cookie sheets
  • One teaspoon onion powder
  • 3–4 eggs
  • One teaspoon garlic powder
  • Few grinds of black pepper

Procedure to prepare:

  • First of all, wash cauliflower and pat dry and then separate into florets.
  • Place these florets into food processor and pulse until it looks like cauliflower snow.
  • After that, place it in a bowl and cover with a plate and microwave for 6–8 minutes until it thoroughly steamed.
  • Turn off the microwave and let it be cooled.
  • Once thoroughly cooled, gather up the cloth ends and twist to form a cauliflower ball and squeeze the liquid.
  • Now, unknot your cloth over a bowl.
  • Add your spice to the dry cauliflower pulp and beaten eggs and cheese.
  • Add pepper to taste and mix well.
  • After this, spread the dough very thinly on your parchment-lined cookie sheets.
  • Bake until beginning to brown on edges.
  • Cut your sheets of cauliflower cracker to make then cracker-sized strips.
  • Cook these stripes again for 5–10 minutes.
  • After fully dry and cool, store them in a closed bag.
  • You can also use silica gel to keep the moisture off.
  • Enjoy with dips, soups or plain.
