Cincau — or grass jelly, is one of the traditional Indonesian drink. Cincau is made from cincau leaves and water. It is not hard to make Cincau, you just need two main ingredients above and some energy to squeeze the leaves. Put the leaves in a bowl and pour sufficient water, then squeeze the leaves until it becomes flakes and the water color is darker and thicker. Strain the water, move the liquid to a sterile container, leave it alone. Then, after a while it will turn into grass jelly.

You may not like the taste if you just eat it straight after the leaves become grass jelly, so I recommend you to add some condiments such as simple coconut milk and liquid brown sugar. It’s okay if you don’t have brown sugar, you can change it with plain sugar.

Coconut milk has simple ingredients. First, you must have grated coconut — and water. Prepare strain on a big bowl, then set the grated coconut on the strain, splash the water to the grated coconut, squeeze it until the liquid isn’t thick. Heat the liquid with medium fire and if you want to, you can add two pandan leaves. Stir it until it boils. Add some salt and turn off the fire.

Now you are going to make liquid brown sugar. Pour one glass of water in a pot and two pieces of brown sugar. Heat it till the brown sugar melt. The complement is all ready and we will pour all the things we have made. Scoop some grass jelly, put the coconut cream and the brown sugar liquid in it.

Congratulations! Now you have Cincau. How does the taste feels like?
