Super-easy super-veggie sauce and meatballs

I make this all the time! My two boys love it and have no idea they are eating a TON of veggies.
Here is my very flexible and simple recipe:
Sauté onions, celery, carrots, garlic, and two giant handfuls of spinach until soft.
Add 1 cup of broth and hot sauce to taste plus a tbs each of salt, pepper, basic and oregano once veggies are getting browned. Keep stirring every couple of minutes.
Once semi soft add two cans of diced tomatoes and three cups of water. Get to boil and then cover and lower to simmer for 20 minutes or until everything is soft.
Using a hand blender turn that pot of veggies into a yummy green sauce!
Rip open a couple pound packages of ground beef and make balls in your hand then toss em in. Keep it on medium for half hour or until meatballs are cooked.
Enjoy over spaghetti or quinoa.
Yum :)
